We are seeing a significant increase in the amount of Sauvignon Blanc that sees some lees work, adding savoury, bread-like flavour and greater textural complexity. So it is with this textbook example from Flying Mouton. Limes, unripe gooseberry and passionfruit with herbs on a restrained nose. The palate offers a mix of tartness and sweet tropical accents with a touch of lime sourness on a dry, crisp finish. It's certainly a Savy but with couple of nice twists. -JP
