Black bubbles have alway been cult icons of the Barossa. No surprises that one of the New Barossa's true experimentalists has put his hand to a serious example. This blend of two varietals, seven vintages and a lick of fortified has amounted to a meagre 760 bottles, no doubt as sure to dissapear as the last disgorgement. The cabernet dutifully brings the swarm of herbs and leaves, as the shiraz drives its pepper.The complexities of a near decade's nuances are married in a creamy mousse beholding dark fruits, sweet bread, leather, woods and spices. Finally, the restrained dose of liqueur blooms caramelised plumb and cashew on a long, persistant finish. -NT
